How it all began...
Meet Ms. Bahamafoodie

I am so happy we’ve found each other! Since you’re here, I want to I introduce myself. My name is Katherine Coakley, aka Bahama Foodie. I am an island gal from the sunny shores of Nassau Bahamas. An island with breath taking beaches, bold flavours, and beautiful people. Outside of the apron, I am a personal coach for powerhouse women, a speaker, a humanitarian, and a superhero big sister. I have been Plant-based for three years, but I have been meatless for almost six years. Before transitioning to a plant-based diet, I was your typical wings girl. I loved wings but I loved them, even more, when jerk or barbecue sauce was on them. I grew up in a family of amazing cooks who enjoy food in all forms, so this journey was very unique for me! I never imagined that I would not be eating meat or animal products yet still enjoying food.

People become plant-based for varying reasons, but my journey began for health and spiritual reasons. In the year 2014, I had an injury to my ankle that changed my life. At first, I thought I had a simple broken bone, but it developed into so much more. Long story short, I did months of physical therapy, and treatments, and was prescribed heavy pain meds but nothing worked. I eventually had ankle reconstruction surgery, but I dealt with pain and lots of inflammation after. After visiting three different doctors that could not tell me what was happening, I turned to my faith. I was desperate because the pain some days was debilitating, and it began eroding my inner security and hope. In August 2017, I was led into the Daniel Fast and I felt so much better when it ended. Immediately after, I completed the fast, I got a text message from a friend, with a link. I clicked the link, and it took me to a video where a pastor was giving his testimony about how the Holy Spirit instructed him to change his diet. I thought to myself “OMG” this is it! The Pastor transitioned to a pescatarian diet, and his life changed. At that moment I knew it was confirmation and I got my answer. From that day in September 2017, I never ate meat again and I eventually transitioned to becoming pescatarian and eventually, plant-based. Since transitioning, I have managed my weight better, and I don’t struggle with the level of inflammation or discomfort I use to. Beyond that, I feel much healthier, and I still get to enjoy delicious food that also makes me feel good. I have built a diverse thriving community of people who like me are interested in good food, good health, and self-care. In this community, I have shared my cooking skills, and flops in the kitchen and have chronicled my fitness and faith along the journey.

So here is the deal, I am still on the journey, and I’d like to invite you to hang around with me in whatever way that makes you feel comfortable.
